The Foods of Summer

As much as I know the nutritional value of fruit I find I’m not often in the mood to eat it. Until summer roles around… Mango smoothies – that contain not much more than ripe mangoes, watermelon juice (with or without a splash of vodka), berries, cherries and other stone fruits all seem like, and actual are, mood-lifting foods. 

A favorite summer food featuring fruits we use more like vegetables is gazpacho.  It’s so refreshing and easy to make but works best with summer cucumbers and perfectly ripe tomatoes.  Personally, I like the creamy versions like the ones I’ve had in Madrid as opposed to the chunky, really red ones I’ve seen.  I don’t even know if those are really gazpacho.  Here’s a sample recipe but play around with it to make it your own.  Fresh basil or black pepper are nice additions.

Summer Gazpacho

Blend thoroughly in blender or food processor until very creamy:

Coarsely chopped –

6 Medium sized perfectly ripe tomatoes

2 Large peeled cucumbers

2 Red peppers

1 Medium sized white or yellow onion

3 Cloves garlic – smashed or minced

Plus –

A few slices of great quality bread (optional)

½- 1 Cup mineral water

¼ Cup extra virgin olive oil (add more if you like)

Sherry vinegar and sea salt to taste.

Serve immediately or refrigerate for a day or two.

Please don’t be afraid of the sugar in most fresh (not dried) fruits.  Unless you have a condition that necessitates no sugar in your diet, the vitamins and minerals, water and fiber, phytonutrients, and the enjoyment of seasonal fruits are beneficial to your health.
